Azerbaijani-style lamb khashlama

Khashlama, typical of Caucasian cuisine, doesn’t adhere to a single recipe but consistently delivers delicious flavor with meat as its main ingredient. Notably, it’s both flavorful and straightforward to prepare: meat and accompanying vegetables are cooked together in one pot. This dish epitomizes the healthful and hearty offerings of Caucasian cuisine, featuring meat and vegetables stewed in their own juices with minimal added liquid. Ideally cooked in a thick-bottomed pot or, traditionally, in a cauldron, khashlama embodies the essence of hearty and wholesome cooking. Give it a try and enjoy!

  • 1 kg of lamb
    1/2 tablespoon salt

Place the ingredients in the vat (except the spices) in the following layers: meat, onion, sweet pepper, tomatoes. You can repeat again in the same order. Then add a glass of red wine and water (if necessary, if needed).
Place it on low heat and cook for approximately 1 hour.
Add the peppercorns, salt and any other spices you like. Leave the dish on the heat for another 25 minutes.
Meanwhile, chop the parsley and toss it in at the very end, five minutes before the end of cooking. Help yourself to a dish!
