Egyptian shakshuka

Shakshuka is a great weekend breakfast recipe when you don’t want to fuss and at the same time want something delicious. Give it a try and enjoy!

Egyptian shakshuka

Ingredients (for 1 serving):

Olive oil
1 onion, finely chopped
4 garlic cloves, chopped
1 fresh hot chili pepper, remove seeds and finely chop
1 medium red or green pepper, chop
4 tomatoes
½ teaspoon ground cumin seeds
1 teaspoon paprika
½ teaspoon ground allspice
6 eggs
A little fresh parsley for garnishing
Salt and freshly ground black pepper to taste

    • In a deep skillet, heat the oil over medium heat. Fry the onion, garlic, chili pepper and pepper for about 5 minutes.
      Chop the tomatoes, then add them to the pan, reduce the heat. Cook for 5 to 10 minutes until the tomatoes are soft, add a little water if needed to make a thick sauce. Add the cumin, red pepper and allspice and stir.
      Beat in the eggs cook until the whites turn white.
      Season with salt and pepper. Garnish with parsley before serving.
